Homemade Frito Pie

Homemade-Frito-Pie-Recipe Sometimes you need something delicious and hearty to keep the day going and my Homemade Frito Pie could be just that! This tasty lunch or dinner can be as spicy or mild as you like it and let’s be honest – you can’t go wrong with Fritos!

Ingredients:
1 jalapeno (sliced)
2 cloves of garlic (minced)
1 yellow onion (diced)
1 lb ground beef (I used 80/20)
2 Tbsp cumin
2 Tbsp paprika
1 Tbsp chili powder
1 tsp cayenne pepper
1/2 tsp pepper
1/2 tsp salt
1 cup beef broth

1 cup tomato sauce
1 bag sharp cheddar cheese 6-8 oz
1 bag Fritos

Homemade-Frito-Pie-Recipe In a deep skillet, add in half of the onions, all of the ground beef, the cumin, paprika, chili powder, cayenne, pepper and salt. Cook and mix thoroughly until beef is cooked. Add one cup broth and stir well. Add one cup of tomato sauce and mix in thoroughly. Simmer on low until the sauce thickens and it is not as soupy. Taste test to see if the spices are right and tinker a bit if you like it a little more salty, spicy, etc. In a medium ramekin (or bowl), add Fritos on the bottom, top with the chili con carne you just cooked, top with cheese, onions, more Fritos and slices of jalapeno. This makes 4 to 6 ramekins depending on the size you use.
