Chicken Lemon Rice Soup

Chicken Lemon Rice Soup Recipe It’s chilly out there, so soup may be the answer! This Chicken Lemon Rice Soup is homemade and perfect for treating the common cold or your cold bones from this crazy weather!

I like traditional lemon rice soup, but really prefer soups that aren’t so thick. I also like to add a little chicken to make it more filling, so I aimed to make something more like a traditional chicken rice soup, but with some subtle lemon flavor.

Ingredients
6 chicken bouillon cubes
10 cups water
three celery ribs
two dozen baby carrots
1 tsp dried, minced onion (or 1/4 finely diced onion)
1 tsp Italian seasoning
1/2 tsp minced garlic
1 1/2 cups cooked, diced chicken
1 bag of frozen Trader Joe’s Organic Jasmine Rice, cooked according to directions (or 10 ounces cooked rice)
freshly squeezed juice from one lemon

Dissolve bouillon in boiling water. While the bouillon dissolves, chop your celery, carrots and onion. Add all of them to the boiling water. Add Italian seasoning. Reduce the heat to a simmer and cook for about 20 minutes or until vegetables are soft. Add garlic, cooked chicken and lemon juice. Simmer about 3 to 5 more minutes. Add cooked rice and stir. Serve and enjoy!

Ingredients
