I was recently presented with the Gorton’s Seafood Challenge! Tell you more about it?? Okay, I will! I was given a challenge to choose a Gorton’s recipe that I’ve never tried before and see what I could do! Since I hadn’t tried any of the grilled fillets before, I wanted to try them. AND, while my kids LOVE the Gorton’s fish sticks (which we eat about once per week), they weren’t going to be into the fillets, so these were just for me and the hubby.
I always prefer a recipe that I can make in well under 1/2 hour, so the Grilled Fillet Paella seemed like the perfect fit! That being said, I tweaked it just a bit. Let’s pretend that the reason that I tweaked it was because I had some great recipe ideas and not that I either bought the wrong item at the store or forgot something. 😉
My husband and I aren’t huge fans of onion, so I went with onion powder for the flavor. After melting the butter, I added the chicken broth (which was not low sodium because I am a dork, keep the regular on-hand and didn’t realize that it would make the recipe saltier) and a can of tomatoes with chilies that I had because I bought the wrong size of canned tomatoes at the store. (Hey, I never pretended I was a good cook or paid attention to detail!! Anyone who knows me well will tell you. My husband hid my holiday gift in plain site in his office because he knew I’d never notice. LOL This is why I’m a couponer and not a chef.)
Anyhoo, once that was ready, I added the instant rice and the frozen Gorton’s Fillets, covered and let it simmer for 10 minutes. That I can do! Ten minutes later, I uncovered the pan and separated the now flaky fish. After another five minutes, my paella was ready to serve! I did not add the red pepper flakes only because I’d added the can of tomatoes with chilies already.
My husband and I LOVED it! Other than it being a little too salty (my fault!! Choose the low-sodium chicken broth!), it really was delicious. If you choose to go the route I did, be a little careful because the canned tomatoes with chilies gave it a huge kick, so if you’re not a spicy food fan, use the regular tomatoes with a dash of red pepper flakes. The fish was flaky, flavorful and had a fantastic texture. We were both concerned that it might fall apart during the boil, but it didn’t do that at all. It was actually my absolute favorite part of the dish. I will be making this again in the future for sure!
