As a part of the Holiday’s In The Kitchen Event, I wanted to bring you a recipe that would be great and easy. As you know, I have two little kids, don’t have a lot of time, and am not a well seasoned cook/baker. I like things that are easy and tasty. That being the case, these are the perfect treat!
Easy Pumpkin Muffins
1 package yellow cake mix
1 15 oz can pumpkin puree
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper liners.
2. In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth. Spoon equal amounts of batter into the prepared muffin cups.
3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean.
These are VERY moist because of the fresh pumpkin and tend to be sticky when you are spooning the batter into the cups. Just push it down as flat as you can before baking.
